We’re excited to take you behind the scenes at Arca Society, a restaurant at the Arca, as we revamp our menu! We had the opportunity to sit down with our talented chef – Yeung to discuss his creative process, the inspiration behind the new dishes, and what guests can expect from this exciting transformation.

Q: What inspired you to revamp the menu at Arca Society?

Chef Yeung: “I believe that food should tell a story. Our menu needed to reflect the vibrant energy of our community while showcasing seasonal ingredients. I wanted to create a menu that not only excites the palate but also connects with the local culture. Each dish is a reflection of the stories shared at our tables, drawing on the rich tapestry of our community’s flavors and traditions. By revamping the menu, I aim to create a dining experience that feels both personal and memorable, allowing guests to enjoy something that resonates with their own experiences.”

Q: Can you tell us about your signature dishes?

Chef Yeung: “Two signature dishes I’m particularly excited about are the Grilled US Angus Prime Striploin and the Mentaiko Cutfish Udon. The Prime Striploin is a celebration of quality; we source the great Angus beef, which is known for its tenderness and flavor. I enhance it with a rich herb butter and roasted garlic, allowing the natural richness of the meat to shine through. It’s simple yet incredibly satisfying—each bite is a testament to the quality of the ingredients.

On the flip side, the Mentaiko Cutfish Udon is a dish that brings a taste of Japan to our menu. The udon noodles serve as a perfect canvas for the mentaiko sauce, which adds a unique umami flavor profile. I love incorporating seasonal greens to keep the dish fresh and vibrant. It’s a fusion of comfort and sophistication, designed to provide a warm, inviting experience that feels like a hug on a plate!”

Q: How do you incorporate seasonal ingredients into your dishes?

Chef Yeung: “Incorporating seasonal ingredients is a cornerstone of my culinary philosophy. I work closely with local farmers and suppliers to ensure we are using the freshest produce available. Each month introduces new flavors, and I take great joy in experimenting with these ingredients to create dishes that celebrate the essence of the time of year. For example, in the fall, I’ll focus on hearty root vegetables and pumpkin. This approach not only enhances the flavors of the dishes but also supports our local agriculture, fostering a sense of community.”

Q: What role does feedback from guests play in your menu development?

Chef Yeung: “Guest feedback is invaluable in the menu development process. We actively seek input through surveys and direct conversations with our diners. Understanding what they love and what they’re curious about helps guide our culinary direction. I often find that the best ideas come from our guests—they share their experiences and preferences, which inspires me to innovate while still honoring their favorites. This dialogue creates a dynamic relationship between the kitchen and our patrons, ensuring that the menu evolves in a way that resonates with our community.”

Q: How do you ensure each dish reflects a unique story?

Chef Yeung: “Every dish at Arca Society is crafted with a narrative in mind. I draw inspiration from my travels, cultural heritage, and personal experiences. Q: What challenges do you face when revamping a menu?

Chef Yeung: “Balancing innovation with familiarity is one of the biggest challenges when revamping a menu. While I want to introduce exciting new concepts, I also recognize that our guests have beloved dishes they cherish. It can be a delicate dance to ensure that the new menu feels fresh and innovative while still honoring the classics that our patrons return for. I approach this challenge with an open mind, willing to adapt and iterate based on both my vision and the preferences of our guests. Ultimately, it’s about creating a cohesive experience that excites and satisfies.”
